Cheesy Rice is a very simple rice recipe which combines together rice, veggies and cheese into a delightful combination. Very easy to make and tasty too!
I tried it out a few days back as I wanted to make some different rice recipe from what I normally make. This Cheesy rice turned out great. It can be eaten by itself or served with some gravy. I served it with Pickled Prawns and Chicken Kofta Curry which I had made the same day.

Cooking time : 15 min
Ingredients:
Butter: 1 tbsp
Bay Leaves: 3
Garlic: 3 cloves finely chopped
Onions: 1 medium chopped
Capsicum: 1 chopped
Basmati Rice: 1 cup
Coriander Leaves: 1/2 cup finely chopped
Tomatoes: 2 medium peeled and chopped
Salt: 1 tsp
Pepper: 1/4 tsp
Chili Powder: 1/4 tsp
Water: 2 and 1/2 cups
Cheese: 1/2 cup grated
Method of Preparation:
- Wash and soak rice in water for 1/2 hour.
- Melt butter in a pan. Add bay leaves and garlic. Stir fry for 1-2 minutes.
- Add onion and stir fry till translucent.
- Add all other ingredients except cheese and mix well.
- Add heated water and cook on medium heat till rice is completely cooked.
- Add cheese and serve hot.
