Avocado Egg Salad is a delicious salad recipe which gets ready very quickly. It can be eaten as is, used as a spread on toast or as a stuffing in sandwiches.
Here is a step by step recipe of Avocado Egg Salad with pictures:
Serves: 3-4
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
Eggs: 4
Avocado: 2
Onion: 1 small cut finely
Basil: 2 tbsp + to garnish (finely chopped)
Mayonnaise: 3 tbsp
Lemon Juice: 1/2 – 1 tbsp
Salt: to taste
Pepper: to taste
Method of Preparation:
- Boil the eggs and cut them into small pieces.
- Cut the avocado into small pieces.
- Mix all the dressing ingredients mentioned above i.e. mayonnaise, basil, lemon juice, salt and pepper. Mix well
- Add to the dressing the eggs, avocado and onion and mix well.
- Garnish with basil.
