Avocado Egg Sandwich is a healthy sandwich recipe which combines the goodness of avocados and eggs!
Avocado is a nutritional powerhouse with several health benefits. When I read about the numerous health benefits which Avocados offer, I decided to make it a part of our regular diet. I often make the Avocado Tomato Salad which everyone in my house likes. However, this time I wanted to make something different. I had ripe avocados which had to be finished soon and also had bread whose expiry date was not too far. So obviously the first recipe which struck me was sandwiches. Now what else could I add to the avocado to make the stuffing. Of course, boiled eggs. And voila, a delicious avocado egg sandwich was ready which was loved by all 🙂
Here is the step by step recipe for avocado egg sandwich with pictures:
Makes: 5 sandwiches
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
Avocado: 2 ripe peeled and pitted
Boiled Eggs: 4 finely chopped
Lemon Juice: 1 tbsp
Mayonnaise: 1 tbsp
Pepper Powder: 1/2 – 1 tsp
Bread Slices: 10
Butter: As required
Salt: to taste
Method of Preparation:
- Mash the avocados with the back of a fork.
- Add to it the egg pieces, lemon juice, mayonnaise, pepper powder and salt. Mix well.
- Apply butter on one side of each bread slice.
- Heat a pan. Place a bread slice with the buttered side facing down.
- Spread a portion of the avocado egg stuffing on the side which does not have butter.
- Cover with another bread slice with the buttered side facing upwards.
- Once the bread slice which is on the pan is brown, flip over to cook on the other side.
