Here is what you can make with over-ripe bananas in the kitchen- A super moist and super soft Banana Bread which is extremely delicious. This was the first time I made it and it turned out so good, that it disappeared within minutes of making it. It is a perfect tea time snack.
Often you have over-ripe bananas in the kitchen and you do not know how to utilize them. Then you have to come up with innovative ideas of using them. I love mashing and using these bananas in various recipes (Sweet Appe, Sheera,Whole Wheat Banana Muffins, Banana Appe).
For now, here is my latest experiment with over ripe bananas – banana bread.
Here is the step by step recipe for Banana Bread with pictures:
Makes: 1 loaf
Preparation Time: 10 minutes
Cooking Time: 1 hour
Ingredients:
All-Purpose Flour: 2 cups
Bicarbonate of Soda: 1 tsp
Salt: 1/4 tsp
Eggs: 2
Butter: 1/2 cup melted
Brown Sugar: 3/4 cup
Vanilla Essence: 1 tsp
Over ripe bananas: 2 and 1/3 cup
Method of Preparation:
- Pre-heat the oven to 180 degrees celsius. Grease a loaf pan with oil\butter.
- Sift together the flour, bicarbonate of soda and salt.
- Mix together brown sugar and butter. Beat well.
- Beat eggs and add to butter-sugar mixture.
- Add mashed bananas and vanilla essence to sugar- butter mixture and beat well.
- Add the liquid mixture from step 5 to the flour and mix well.
- Pour the batter into the loaf pan. Let bake for 1 hour or till toothpick inserted comes out clean. Let cool for 10 minutes and cut into slices.
