Cooking Time: 20 minutes
Ingredients:
Tomato : 1 (roughly chopped)
Onion : 1 (roughly chopped)
Brown Bread Slices : 4 (cut into cubes)
Cheddar Cheese : 1 cup
Garlic cloves : 4 (finely chopped)
Eggs – 4
Milk : ½ cup
Oregano : 1 tbsp
Olive oil : 1 tsp
Pepper : as per taste
Salt : as per taste
Method of Preparation:
- In a pan, heat olive oil. Add the onion and garlic and stir fry till translucent.
- Add tomato and stir fry till soft.
- Add the salt, pepper and oregano and mix well. Transfer to oven dish.
- In a separate bowl, mix eggs, milk, salt and little pepper (as per taste) and whisk well.
- Add the bread pieces to the onion tomato mixture and mix gently.
- Add the whisked egg mix to onion tomato mixture and mix to gently coat the bread pieces. Be careful not to smash the bread completely.
- Add the cheese and give a light stir and bake in a preheated oven (180 deg Celsius) for 20-25. min until the top is a bit golden and crusty. Your Yummy Breakfast Casserole is ready!
Note: You can use white bread if you do not like brown bread
