Broccoli is known for its extensive health benefits. It is known to be a powerhouse of nutrients and is also packed with phytochemicals and antioxidants. It contains high levels of fiber and is a rich source of vitamin-C. These are just a few of the numerous benefits of Broccoli and hence it is highly recommended to make Broccoli a regular part of your diet.
Since nowadays we have started eating salads and soups for dinner twice a week, I keep looking out for such healthy but interesting options. Already added a few to that list which I make very often now – Mixed veggies in Vinaigrette dressing, Almond soup, Carrot Coriander Soup, Russian salad.
This simple and quick recipe combines the goodness of broccoli and babycorn in a unique taste and I often make it as everyone in my house loves it.
Serves: 2-3
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
Baby corn: 1 cup cut diagonally
Capsicum: 1 cup chopped
Onion: 1 medium chopped
Garlic: 4-5 large flakes
Pepper Powder: 1-2 tsp
Sugar: 1 tsp
Cornflour: 2 tbsp mixed in 1 cup of water
Salt: to taste
Cashew Nuts: 1/4 cup cut into small pieces
Method of Preparation:
- Heat a little oil in a pan and stir fry the garlic till brown.
- Add the capsicum, onion, broccoli and baby corn and stir fry for 3-4 mins.
- Add pepper powder, salt, sugar and mix well.
- Add the cornflour paste and mix well.
- Fry cashew nuts in a little oil and use to garnish. Serve hot.
