Broccoli Corn Tikki is a crunchy tasty snack which combines the health benefits of broccoli and corn. It is very easy to make and and gets ready quite quickly. Can serve as a perfect tea-time snack or appetizer.

Today when I was thinking about what to make for my daughter for evening snack, I came across the broccoli in my fridge. I thought why not try something new which I have not made before. My daughter loves sweet corn and I decided to make a snack combining broccoli and corn. Thus came up this yummy Broccoli Corn Tikki. It turned out awesome and was enjoyed by all of us.
Here is the step by step Broccoli Corn Tikki recipe with pictures:
Makes : 16 tikkis
Preparation Time : 15 minutes
Cooking Time : 15 minutes
Ingredients:
Broccoli florets: 2 cups finely chopped
Sweet Corn: 2 cups boiled and lightly crushed
Onion: 1 large chopped
Cashew Nuts: 1/2 cup cut into small pieces (optional)
Ginger Paste: 1 tsp
Garlic Paste: 1 tsp
Chili Powder: 2 tsp
Salt: to taste
Bread Crumbs: 1 – 1 and 1/2 cups
Method of Preparation:
- Heat 2 tbsp oil in a pan. Add onion and stir fry till translucent.
- Add ginger and garlic paste and stir fry.
- If adding cashew nuts, add them now and stir fry till brown.
- Add broccoli and sweet corn and stir fry for 2-3 minutes.
- Add chili powder and salt and mix well. Switch off the flame.
- Add bread crumbs and mix well. Start with adding 1 cup bread crumbs and check if you can bind it together properly. If required, add more bread crumbs.
- Divide into 16 portions.
- Heat oil on a flat frying pan. Take each portion and flatten into a tikki.
- Shallow fry on pan till golden brown on both sides.
- Serve with ketchup.
Note: You can add more chili powder if you like the tikkis spicier. Also the bread crumbs is for binding. So you can increase or reduce the amount required
