Carrot, often referred to as the crunchy powerfood has several health benefits. Other than being rich in Vitamin A which is the most commonly known health benefit, it is also known to promote healthy skin, prevent heart diseases, slows down aging and also helps prevent infection.
Here is a very simple carrot paratha recipe. It is very easy to make and serves as a great breakfast or lunch option as well as a great tiffin box option for my toddler and lunch box option for my hubby.
You can replace the grated carrot with methi (methi parathas) or palak leaves too. These parathas can be served with pickle, butter, tomato ketchup, curd or chutney. In my house, everyone enjoys these parathas with butter.
Makes: 8-10 parathas
Preparation Time: 20 minutes
Cooking Time: 2 minutes per paratha
Ingredients:
Carrot: 2 cups grated
Wheat Flour: 2 to 2 and 1/2 cups
Chili Powder: 1 tsp
Turmeric Powder: 1/2 tsp
Sesame Seeds: 1 tsp
Carom Seeds: 1 tsp
Oil: 2 tsp
Potato: 1 small boiled and grated
Salt: to taste
Method of Preparation:
- Mix together all the ingredients mentioned above and knead into dough. Do not add water. Usually the carrot will leave some juice which would be sufficient to knead the dough.
- Divide the dough into 10 equal portions and roll out each portion into a circle of 6″ diameter.
- Heat a Pan and cook each paratha till golden brown sports appear on both sides. Serve with butter, chutney, ketchup, curd or pickle. In my house everyone prefers eating it with butter.
