Chicken Avocado salad with yogurt dressing is a delicious salad recipe which combines together the goodness of chicken, avocados, dill and yogurt. This was a recipe created by my daughter and me in preparation for a master chef competition at her school. After several tries and adjusting the taste after each try, we created this salad which we all loved. It also won her a place as the master chef in her school competition, so this recipe is close to our hearts 🙂
Here is the step by step recipe for Chicken Avocado salad with yogurt dressing:
Preparation Time: 30 minutes
Cooking Time:Â 15 minutes
Ingredients:
For Salad
Chicken: 250 gm breast piece cut into small pieces
Avocado : 1 ripe cut into small pieces
Sweet corn: 1 cup cooked
Cherry tomatoes: 10 chopped into quarters
Chives:Â â…› cup chopped
Dill: 1 tbsp chopped
Eggs: 2 boiled and cut into small pieces
For dressing
Greek yogurt: 1/2 cup
Garlic: 1 clove minced
Lemon Juice: 1 tablespoons
Olive oil: 1/2 tablespoons
Salt: 1/2 tsp
Pepper: ¼ tsp
Dill: ¼ cup chopped
Pomegranate Seeds (optional): 2 tbsp + extra for garnishing
For Chicken
Salt: ¾ tsp
Pepper: ½ tsp
Paprika: ½ tsp
Lemon juice:Â 1 tablespoon
Olive Oil:Â 2 tablespoon
Method of Preparation:
For Chicken
- Wash the chicken and cut into small pieces.
- Apply the salt, pepper, paprika and lemon juice to the chicken.
- In a pan, heat 1 tsp olive oil. Once the oil is warm, add the chicken in the pan and let cook.
- Once cooked on one side, turn around and cook on the other side too.
- Keep aside. Shred into smaller pieces once cooled.
For Salad:
- In a bowl, mix together the tomatoes, avocado, chives, dill, pomegranate seeds and chicken and toss well together.
- For the dressing, beat together all the dressing ingredients.
Assembly
- Pour the dressing on the salad and mix well.
- Make a base with a lettuce leaf.
- Pour the salad with dressing over the lettuce. Garnish with pomegranate seeds and chopped dill.
Note: Adjust the amount of dressing you pour over the salad as per your taste. Some like a dry salad with less dressing, while others like their salad to be covered in a lot of dressing.
