Chicken Pulao is an Indian rice dish which is very easy to make and gets ready quite quickly. Chicken, Basmati Rice and several spices are cooked together in one large kadai to make a mouth-watering delicious meal.
A few days back, I wanted to make a rice dish with chicken for dinner. My usual favorite Murg Dum Pukht Biryani requires quite some marination and I did not have time for that. I thought of trying out Chicken Pulao and came up with this delicious and simple recipe. It was ready quite quickly and everyone loved it. In fact I was asked why I dont make it more often. This chicken pulao recipe would now be a regular at my house 🙂

Serves: 3-4
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Ingredients:
Chicken: 500 gms cut into small pieces
Basmati Rice: 2 cups
Onion: 1 large sliced vertically
Tomatoes: 2 medium chopped
Ginger Paste: 1 tsp
Garlic Paste: 1 tsp
Cardamom: 3-4
Cinnamon: 1 inch stick
Cumin Seeds: 1/2 tsp
Cloves: 7-8
Curd: 2 tbsp
Coriander: 1 cup
Chili Powder: 3-4 tsp
Turmeric Powder: 1 tsp
Salt: to taste
Ghee: 2 tbsp
Method of Preparation:
- Apply 1 tsp chili powder, 1/2 tsp turmeric powder and salt to chicken pieces and keep aside.
- Soak Basmati rice in sufficient water for 1/2 hour.
- Heat 3-4 tbsp oil in a pan. Stir fry the cardamom, cinnamon, cumin seeds and cloves briefly for a minutes.
- Add onion and ginger-garlic paste. Stir fry till onion is brown.
- Add rest of the chili powder, turmeric powder and salt and mix well.
- Add chicken pieces and stir fry for 2-3 minutes.
- Add tomatoes and stir fry for 2 minutes.
- Add curd and coriander and mix well. Close lid and let cook till chicken is almost done. Keep aside.
- In a pan, heat ghee. Drain the basmati rice and add to the pan. Stir fry for 1-2 minutes.
- Add chicken mixture to it and mix well.
- Heat 4 cups of water separately and add to rice-chicken mixture. Close lid and let cook on medium flame till rice is completely cooked.
