Corn Cheese Toast is a very easy to prepare breakfast or snack recipe. Corn and cheese are two food items which go very well together, and to that if you add chilies, the combination is just mind blowing 🙂 Look at the corn and cheese on the toast in the picture below, looks awesome doesn’t it?
A couple of years back, when my husband and I were residing in Pune, there was a small cafe around the corner from where we lived. The lady there served delicious corn cheese toast. We loved it so much that it often served as our evening snack while returning from office along with a hot cup of tea. A few days back, my husband remembered the cafe and soon we were discussing how much we used to enjoy the corn cheese toast. I decided to try my own version of it and it came very close to the original one.
Here is the step by step recipe for Corn Cheese Toast with pictures:
Serves: 2-3
Preparation Time:Â 10 minutes
Cooking Time:Â 15 minutes
Ingredients:
Bread Slices: 7
Onion: 1 medium finely chopped
Cheddar Cheese: 2 cups grated
Sweet Corn: 1 cup boiled
Green Chilies: 3 finely chopped
Coriander: 2 tbsp finely chopped
Pepper: 1 tsp
Salt: to taste
Method of Preparation:
- Mix all the ingredients mentioned above except the bread slices. Divide into 7 portions.
- Toast the bread slices on one side in a flat frying pan.
- Spread one portion of cheese mixture on the non toasted side of one bread slice. Repeat for other slices.
- Preheat oven to 180 degrees Celsius. Grill the bread slices in the oven till cheese is completely melted and starts turning brown.
- Cut diagonally into two pieces.
- Serve with ketchup. I personally prefer it as it is without any sauce.
Note: If you are serving kids, you can skip the green chilies for their portion
