Corn cutlet or corn pattice is a very delicious and easy to make recipe of sweet corn and potatoes. A perfect tea time snack or tiffin box option for kids.
I still remember the first time I tried this recipe of corn cutlet. It was several years ago and my parents had gone out. My cousin who had come over to stay the night and I were hungry and decided to make something for ourselves. We boiled some potatoes and added some other ingredients we found in the fridge to come up with this awesome corn cutlet recipe.
Since the first time that I made these corn cutlets, I have made some variations to it to make it better and tastier.
Here is the step by step corn cutlet recipe with pictures:
Serves: 3-4
Preparation Time: 30 minutes
Cooking Time: 15 minutes
Ingredients:
Sweet Corn: 1 cup
Potatoes: 4 medium boiled and mashed
Onion: 1 finely chopped
Garlic: 5 cloves
Ginger : 1 inch
Green Chilies: 2
Lemon: 1/2
Turmeric Powder: 1 tsp
Chili Powder: 1 tsp
Bread slices: 4
Coriander: 2 tbsp finely chopped
Salt: 1 tsp
Bread Crumbs: As required
Method of Preparation:
- Boil sweet corn and blend to rough paste along with garlic, ginger and green chilies.
- Mix together mashed potatoes, onion, coriander and corn paste.
- Add lemon juice, turmeric powder, chili powder and salt.
- Soak bread slices in water, squeeze out the excess water and add the bread to the mixture. Mix well. If the mixture still feels too sticky, you can add more bread crumbs to it.
- Divide into small balls. Flatten each ball and dip in bread crumbs to cover on all sides.
- Shallow fry on non stick pan till golden brown on both sides.
