Couscous Salad is a healthy and yummy salad recipe in which couscous is tossed with vegetables, feta cheese, chickpeas and a lemony dressing!

Serves: 3-4
Preparation Time: 15 minutes
Cooking Time: 2 minutes
Ingredients:
Couscous: 1 cup
Water: 1 cup
Virgin Olive Oil: 2 tbsp
Salt: 1 tsp
Cucumber: 1/2 cup
Onion: 1/2 cup
Coloured Bell Pepper: 1/2 cup
Cooked Chickpeas: 1 cup
Basil: A handful chopped
Mint: 2 tbsp chopped
Feta Cheese: 100 gm cut into small cubes
Sunflower seeds: 1/4 cup (optional)
For Dressing:
Lemon Juice: 3 tbsp
Honey: 1 tbsp
Virgin Olive Oil: 3 tbsp
White Vinegar: 1 tbsp
Oregano: 1/4 tsp
Salt: 1/4 tsp
Pepper: 1/4 tsp
Method of Preparation:
- In a pan, add the water, salt and virgin olive oil and bring to a boil. Add the couscous, mix well and close lid till the water is completely absorbed by the couscous. Fluff it up with a fork and let cool completely.
- Mix together the couscous, onion, cucumber, bell pepper, chickpeas, feta cheese, basil and mint leaves. Mix gently so as to not mash the feta cheese.
- Mix together all the ingredients for the dressing in a bowl.
- Pour the dressing over the couscous salad and mix well. Stir in the sunflower seeds.
Note: you can add more lemon juice or honey to your liking
