Custard cookies are very simple melt in the mouth cookies made with custard powder giving it a nice flavor. These cookies were on my to-do list for a very long time. And now finally when I made them, I am just in love with them.
They are very easy to make and require 4 main ingredients. These custard cookies are perfectly crunchy on the outside and soft and delicious inside.

Preparation Time : 15 min
Cooking time : 15-18 min
Ingredients:
All Purpose Flour: 1 cup
Softened Unsalted Butter: 1 cup
Custard Powder (Plain Vanilla): 1/2 cup
Powdered Sugar: 1/2 cup
Vanilla Essence: 1/2 tsp
Method of Preparation:
- Cream together the vanilla essence and butter till butter is very soft.
- Mix together the custard powder, all purpose flour and sugar.
- Add dry ingredients to the butter and mix well.
- Knead to form dough adding very little extra flour if needed. Divide the dough into 20 circular portions and flatten slightly.
- Place the cookies on a greased baking tray. Using the back side of the fork make lines on the cookies.
- Preheat oven to 180 deg celsius and bake for 15-18 min.
- Remove the cookies from the oven, they will be soft, especially the centers – and that is fine as they will harden later. Cool on a wire rack.
