Mixed Vegetable Cutlet

Mixed Vegetable Cutlet is a perfect way to feed vegetables to fussy eaters. A mix of different vegetables is made into cutlets in this recipe and shallow fried.
Ingredients
  • Potatoes: 3 and ½ cups boiled and mashed
  • Green Peas: ½ cup
  • Beetroot: 1 and ½ cup peeled and grated
  • Carrots: 1 and ½ cup peeled and grated
  • Onion: 1 finely chopped
  • Chili Powder: 2 tsp
  • Turmeric Powder: ½ tsp
  • Chat Masala: 1 tsp
  • Coriander Powder: ½ tbsp
  • Cumin Powder: ½ tbsp
  • Coriander: ¼ cup finely chopped
  • Mint leaves : 1 tbsp finely chopped
  • Ginger Paste: ½ tsp
  • Garlic Paste: ½ tsp
  • Bread Crumbs: As required
  • Salt : a pinch
Instructions
  1. Microwave the green peas for a minute so that they become soft. Mash them lightly.
  2. In a pan, heat 1 tbsp oil and stir fry the onion till translucent. Add the ginger and garlic paste and stir fry briefly.
  3. Add beetroot and carrot and stir fry for 2-3 minutes.
  4. Add coriander and mint leaves and mix well. Add chili powder, turmeric powder, chat masala, coriander powder and cumin powder and mix well.
  5. Add mashed potatoes and green peas and mix well.
  6. Take a small portion of this mixture and flatten it. You can cut it into desired shape using cookie cutter. I just preferred the normal circular shape this time 🙂
  7. Roll each cutlet in bread crumbs.
  8. Heat oil in a flat frying pan and shallow fry the cutlets till golden brown on both sides.
Notes
If the mixture is too sticky, you can add some bread crumbs to it and mix it.
