Garlic: 2 finely chopped

Chili Powder: 1 tsp
Pepper Powder: ½ tsp
Salt: to taste
Cheddar Cheese:3 cups grated
Tortilla wraps: 6 medium
Instructions
Heat the olive oil in a pan. Add onion and stir fry till translucent. Add garlic and stir fry for a minute.
Add the prawns and stir fry for 2-3 minutes till prawns are cooked and white.
Add capsicum, corn and beans and mix well.
Add cumin powder, chili powder, salt and pepper and mix well. Let cook for 3-4 minutes till the capsicum becomes soft.
Divide the mixture into three parts for medium sized tortilla.
Heat a pan. On the pan, place a tortilla. Add a layer of cheese, then a layer of the mixture from step 5. Add another layer of cheese and place another tortilla on top. Once brown, flip over and let cook on other side too till both sides are golden brown.
Repeat for other tortillas. Cut the Prawns Quesadillas into triangles for serving. I like to serve the prawns quesadillas with sour cream.
