Avocado Egg Salad

Avocado Egg Salad is a delicious salad recipe which gets ready very quickly. It can be eaten as is, used as a spread on toast or as a stuffing in sandwiches.
Ingredients
  • Eggs: 4
  • Avocado: 2
  • Onion: 1 small cut finely
  • Basil: 2 tbsp + to garnish (finely chopped)
  • Mayonnaise: 3 tbsp
  • Lemon Juice: ½-1 tbsp
  • Salt: to taste
  • Pepper: to taste
Instructions
  1. Boil the eggs and cut them into small pieces.
  2. Cut the avocado into small pieces.
  3. Mix all the dressing ingredients mentioned above i.e. mayonnaise, basil, lemon juice, salt and pepper. Mix well
  4. Add to the dressing the eggs, avocado and onion and mix well.
  5. Garnish with basil.
Notes
