- All Purpose Flour: 2 cups
- Vegetable Oil: 1 and ¼ cup
- Sugar: 1 and ¾ cups
- Buttermilk : 1 cup
- Vanilla Essence: 2 tsp
- Baking Soda: 2 tsp
- Baking Powder: 2 tsp
- Cinnamon Powder: 2 tsp
- Carrot: 3 cups grated
- Walnuts: 1 cup broken into small pieces
- Salt :1/2 tsp
- Preheat the oven to 180 degrees Celsius. Grease and flour a cake pan.
- Mix together the buttermilk, sugar, vegetable oil and vanilla essence and beat well.
- Mix in the flour, baking soda, baking powder, cinnamon powder and salt. Mix well.
- Stir in the carrots and walnuts.
- Pour the prepared batter in the cake pan and let bake for 45 minutes.
- Let cool in pan for 10 minutes and then turn on wire rack and cool completely.
