This simple egg curry has been a favorite at my house for sunday morning breakfasts since the time I was a kid. We all loved it and hence mom would make it very often. Now that I am myself a mom and my kiddo likes it, I too make it quite often.
I just love this recipe. It is one of the simplest recipes I have ever made and gets ready in a jiffy. Perfect for the days on which you have not planned in advance and yet want to eat something interesting for breakfast. It also uses very simple ingredients easily available in your kitchen. It tastes best with Pav (Dinner Rolls). Hope you like it as much as we all do 🙂

Serves:Â 2-3
Preparation Time : 15 minutes
Cooking Time :Â 10 minutes
Ingredients:
Eggs: 6
Green Chilies: 2 slit vertically
Onion: 1 large finely chopped
Garlic: 4 cloves finely chopped
Coriander: 2 tbsp chopped
Chili Powder: 1/2 tsp
Turmeric Powder: 1/2 tsp
Garam Masala: 1/2 tsp
Salt: to taste
Water: 1 and 1/2 cup
Method of Preparation:
- Hard boil the eggs. Peel and cut into very small pieces.
- In a pan, heat 1 tbsp oil. Stir fry the onion, green chilies and garlic till onion is translucent.
- Add chili powder, turmeric powder, garam masala and salt. Mix well.
- Add the chopped eggs, coriander and water. mix well. Close lid and let simmer for 2- 3 minutes on low heat.
