Egg Fried Rice is a very simple and easy to make rice preparation in the Chinese cuisine. It can be eaten by itself or can be combined with side dishes like manchurian, sweet and sour chicken etc.
As mentioned in my last post, a few days back everyone in my house was in the mood to eat Chinese. I decided to make Egg Fried rice and Chicken Manchurian. Both the dishes turned out a super hit.
Here is the step by step Egg Fried Rice recipe with pictures:
Serves: 2-3
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ingredients:
Eggs: 2
Rice: 1 cup
Spring Onion with Greens: 1 finely chopped
Onion: 1 small finely chopped
Garlic: 1 tsp
Carrot: 1/2 medium finely chopped
Green Capsicum: 1 medium finely chopped
Soya sauce: 1 tsp
Pepper Powder: 1/4 tsp
Vinegar: 1/2 tbsp
Salt: to taste
Method of Preparation:
- Whisk the eggs and keep aside.
- Cook rice in sufficient water. Drain and set aside to cool.
- Heat oil in a pan. Add garlic, onion and spring onions and saute for one minute. Reserve some spring onion greens for garnish.
- Add carrot, capsicum and continue to saute for another minute.
- Add cooked rice and cook on high heat for a minute tossing continuously to avoid burning.
- Add soy sauce, salt and pepper powder and mix gently. Transfer to separate bowl.
- In the same pan, heat 1 tsp oil, pour eggs and lightly scramble. Add fried rice to this and mix.
- Mix in vinegar and garnish with spring onion greens. Serve hot.
