Egg Sun N Snow is another simple yet tasty egg recipe which serves as a quick breakfast or dinner option.
Eggs always come to my rescue on the days when everyone in my house wants to eat something non-vegetarian and we do not have chicken or seafood in the house.

Serves: 2-3
Preparation Time: 10 minutes
Cooking Time: 35 minutes
Ingredients:
Eggs: 4
Onion: 1 large chopped
Tomato: 1 medium chopped
Garlic: 2 cloves finely chopped
Green peas: 3/4 cup
Turmeric Powder: 1/2 tsp
Chilli Powder: 1 tsp
Salt: to taste
Method of Preparation:
- Heat a little oil in a pan. Add onion and garlic and sauté till translucent.
- Add tomatoes and sauté for 2-3 minutes till soft.
- Add green peas, chilli powder, turmeric powder, salt and mix well. Let cook for 2-3 minutes. Add very little water (around 1/4 cup) if mixture becomes too dry.
- Grease a baking tray and put the tomato-onion mixture in it.
- Break 4 eggs over the mixture. For a more even distribution, you can separate the egg whites and egg yolks. Then pour the egg white over the onion-tomato mixture. Next, carefully transfer the egg yolks on it without breaking them
- Cover with aluminium foil and bake in pre-heated oven for 20 minutes at 180 degrees Celsius.
- Remove the foil and let bake for another 10 minutes. Your yummy Egg Sun N Snow is ready to be eaten with bread or rotis.
Note: If you do not want to cook it in the oven, you can directly break the eggs on the onion-tomato mixture on the gas top itself. Add a little extra water to the tomato-onion mixture so as to avoid burning and cook on very low flame with closed lid. I have tried it both on the gas top as well as the oven and it works well.
