Eggless Banana bread is a super soft and super delicious Banana bread which is just perfect to use up over ripe bananas in your kitchen. It is easy to make and needs simple ingredients. It serves as a perfect tea-time snack or we also like to eat it for breakfast.
I often make Banana bread with eggs. This time however, I wanted to try an egg less recipe. I used buttermilk here instead of eggs and the result was simply amazing.

Makes: 1 loaf
Preparation Time: 10 minutes
Cooking Time: 1 hour
Ingredients:
All-Purpose Flour: 1 and 1/2 cups
Bicarbonate of Soda: 3/4 tsp
Baking Powder: 1 tsp
Buttermilk: 1/2 cup
Salt: 1/4 tsp
Unsalted Butter: 1/2 cup melted
Brown Sugar: 1 cup
Vanilla Essence: 2 tsp
Over ripe bananas: 3 big
Walnuts: 1/2 cup chopped
Method of Preparation:
- Pre-heat the oven to 180 degrees Celsius. Grease a loaf pan with oil\butter.
- Sift together the flour, bicarbonate of soda,baking powder and salt. Add the walnuts and mix together.
- In a bowl, mash the bananas with a fork till smooth. Add the butter and mix together till combined.
- Add the buttermilk, brown sugar and vanilla essence and mix well till combined.
- Add the liquid mixture from step 4 to the flour and mix well.
- Pour the batter into the loaf pan. Let bake for 1 hour or till toothpick inserted comes out clean. Let cool for 10 minutes on wire rack and cut into slices
