A simple recipe for a moist and delicious eggless carrot cake! It is very easy to make and so tasty, that you are sure to make it often.
I have been making carrot cake (egg recipe) for many years now. I have been asked several times on how to make this recipe eggless and thought the time has come for me to post the eggless version of this recipe on this blog. It turns out as good as the recipe with eggs, perfectly moist and yummy!
Below is a step by step recipe for eggless carrot cake with pictures:
Preparation Time : 20 mins
Baking Time : 45 mins
Ingredients:
All Purpose Flour: 2 cups
Vegetable Oil: 1 and 1/4 cup
Sugar: 1 and 3/4 cups
Buttermilk : 1 cup
Vanilla Essence: 2 tsp
Baking Soda: 2 tsp
Baking Powder: 2 tsp
Cinnamon Powder: 2 tsp
Carrot: 3 cups grated
Walnuts: 1 cup broken into small pieces
Salt :1/2 tsp
Method of Preparation:
- Preheat the oven to 180 degrees Celsius. Grease and flour a cake pan.
- Mix together the buttermilk, sugar, vegetable oil and vanilla essence and beat well.
- Mix in the flour, baking soda, baking powder, cinnamon powder and salt. Mix well.
- Stir in the carrots and walnuts.
- Pour the prepared batter in the cake pan and let bake for 45 minutes.
- Let cool in pan for 10 minutes and then turn on wire rack and cool completely.
