Greek pasta salad is an easy to make salad recipe which combines together pasta with crunchy cucumbers and sweet bell pepper, ripe juicy cherry tomatoes and feta cheese tossed together with a yummy vinaigrette dressing.
This is one my favorite go-to salad recipes when I want to put something together very quickly. I have made it several times when I have had friends over and it has been always loved by all.
Here is a step by step Greek Pasta Salad recipe with pictures:
Serves: 4-5
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
Pasta (small macaroni or fusilli) : 1 and 1/2 cup uncooked
Cucumber: 2 small peeled and cut into small pieces
Red Capsicum: 1 deseeded and cut into small pieces
Cherry Tomatoes: 15 cut into quarters
Feta cheese: 150 gm cut into small cubes
Greek Vinaigrette Dressing: 1/2 cup
Method of Preparation:
- Boil sufficient water in a big utensil. Add 1 tsp oil and 1 tsp of salt. Add pasta and let boil till the pasta is completely cooked. Drain and keep aside to cool.
- Mix together all the in ingredients mentioned above including the pasta and mix well. Make sure you mix it gently otherwise the feta cheese pieces would get mashed.
- Serve cold or at room temperature as per preference.
Note: I use the store bought Knorr Greek Vinaigrette dressing for this recipe.
