Green Peas and Mint Pulao is an easy to make rice dish which can be cooked very quickly. It goes amazing with any kind of curry or raita or can be also eaten by itself. The mint added to it imparts an awesome flavor.
I love serving it with Paneer Butter Masala or Chicken Curry.
Here is the step by step recipe of Green Peas and Mint Pulao with pictures:
Serves: 4
Preparation Time: 30 minutes
Cooking Time: 15 minutes
Ingredients:
Basmati Rice: 1.5 cups
Green Peas: 1.5 cups cooked
Ginger Garlic Paste: 2 tsp
Green Chilies: 2 slit vertically
Onion: 1 medium chopped
Mint leaves: a handful chopped
Ghee: 2 tbsp
Cashew nuts: 15 cut into small pieces
Cumin Seeds: 1 tsp
Green Cardamom: 4
Cloves: 4
Bay Leaf: 1
Cinnamon: 1 inch piece
Star Anise: 1
Method of Preparation:
- Wash the rice well and then soak in sufficient water for half an hour.
- In a pan, heat the ghee. Add cashews and stir fry till brown. Keep aside.
- In the same pan, add the cumin seeds, cloves, cardamom, bay leaf, star anise and cinnamon. Saute for a minute.
- Add onion and ginger garlic paste. Saute till onion is translucent.
- Add the mint leaves and saute for a minute.
- Add the peas and saute for a minute.
- Add the rice and saute for a minute. Add cashew nuts and salt and mix well.
- Add 3.5 cups of water and cook on medium flame till completely cooked.
