Grilled Chicken Caesar Salad is an easy salad recipe which is healthy and tasty too! It combines the goodness of avocado, cherry tomatoes and lettuce with chicken and eggs and makes a whole meal in itself. The croutons and parmesan cheese add to the flavor!
I first came across a recipe for grilled chicken Caesar salad a couple of months back. I made some of my own changes to it based on our taste and now this salad is a regular in our house.
Here is the step by step recipe for Grilled Chicken Caesar Salad with pictures:
Serves: 4-5
Preparation Time: 30 minutes
Cooking Time: 15 minutes
Ingredients:
Chicken Breast Fillets: 2 large skinless (500 gm) Cut into small pieces
Olive Oil: 1 tsp
Lemon Juice: 2 tbsp
Garlic Paste: 1 tsp
Dried Oregano: 2 tsp
Pepper Powder: 1 tsp
Salt: to taste
Eggs: 4 hard boiled
Romaine Lettuce leaves: 6 washed, dried and shredded into big pieces
Cherry Tomatoes: 1 cup halved
Avocado: 2 sliced vertically
Parmesan Cheese: 1/2 cup grated (optional)
Croutons: 1/2 cup
Dressing:
Mayonnaise: 1/4 cup
Greek Yogurt: 1/4 cup
Olive Oil: 1 tbsp
Lemon Juice: 1 tbsp
Parmesan Cheese: 2 tbsp grated
Salt: to taste
Pepper: 1/2 tsp
Method Of Preparation:
- Marinate the chicken with the olive oil, lemon juice, garlic, oregano, salt and pepper and keep it aside for half an hour.
- Heat a non stick grill pan with a small amount of olive oil and grill the chicken until golden on both sides and completely cooked. Remove the chicken and keep aside.
- Deshell and cut the eggs into quarters vertically.
- For the dressing, mix together the mayonnaise, yogurt, oil, lemon juice, parmesan, salt and pepper. Whisk until well combined.
- For assembling the salad, in a large bowl, place the lettuce with the avocado and tomatoes. Top with the chicken and eggs. Sprinkle the parmesan cheese over the chicken, eggs and vegetables. Pour over the dressing; top with the croutons, mix well to combine and serve!
