Kale Broccoli Salad is a healthy and tasty salad which is made using fresh veggies and a simple lemon honey dressing. It makes a perfect light salad dinner!
A few days back, we visited an organic farm in Bahrain where we picked up some delicious fresh Kale and Carrots. I already had broccoli growing in my garden. So I put it all together and mixed in some dried cranberries, feta cheese, almonds and sunflower seeds. Finally when tossed with the lemon honey dressing, it was a perfect salad which is now turning out to be one of our favorite salad recipes.
Here is the step by step recipe for Kale Broccoli Salad:
Serves: 4-5
Preparation Time: 30 minutes
Cooking Time: 5 minutes
Ingredients:
Kale: 5 cups chopped
Broccoli: florets of 2 small heads
Carrot: 1 big grated
Onion: 1 small finely chopped
Feta Cheese: 150 gm cut into cubes
Dried Cranberries: 1/2 cup
Almonds: 1/2 cup
Sunflower Seeds: 1/4 cup shell removed
Olive Oil: 2 tsp
Salt: 1/2 tsp
Dressing
Virgin Olive Oil: 1/4 cup
Lemon Juice: 2 tbsp
White Vinegar: 2 tbsp
Honey: 4 tbsp
Mustard Powder: 1 tbsp
Dried Oregano: 1/2 tsp
Pepper Powder: 1/2 tsp
Salt: 1/4 tsp
Method of Preparation:
- Steam the broccoli for 1-2 minutes till partially cooked.
- Put 2 tsp virgin olive oil and 1/2 tsp salt on the kale and massage the leaves well with your hand until the leaves color changes to a darker shade and it gets tenderized.
- Dry roast the almonds and slice them.
- Mix together the kale, broccoli, onion, carrots, dried cranberries, sunflower seeds, almonds and mix well. Add the chopped feta cheese and mix together.
- Mix together all the ingredients mentioned for the dressing.
- Pour the dressing over the salad and mix well.
Note: You can add more honey or lemon based on your liking.
