Kangachi Poli (Sweet Potato Poli) is a sweet flat-bread which is made in India in the States of Goa and Maharashtra. The stuffing is made of mashed and sweetened sweet potato which is called kanang in konkani and the outer layer is called as ‘Poli’. Hence the name Kangachi Poli.
The method of preparation is very similar to Puran Poli which is another famous Indian sweet. These polis are made using a mix of Maida and whole wheat flour, so are quite healthy. Also sweet potatoes have their own health benefits because of which I use them in my recipes quite often (Sweet Potato and Beetroot Salad, Sweet Potato Nevryo).

Makes: 25 polis
Preparation Time: 30 minutes
Cooking Time: 5 minutes per poli
Ingredients:
Sweet Potato: 4 cups mashed
Powdered Sugar: 1 cup
Wheat flour: 2 cups
All purpose flour: 2 cups
Turmeric Powder: 1/2 tsp
Oil: 2 tbsp
Salt: to taste
Ghee: for frying
Method of Preparation:
- Mix together the sweet potato, sugar and a pinch of salt. Divide into 25 portions.
- Mix together the all purpose flour, whole wheat flour, turmeric powder, oil and salt to taste.
- Knead into a soft dough.
- Divide the dough into 25 balls.
- Apply oil to your palm and place one portion of dough on it. Spread out the dough with your fingers into a small circular disk of 2-3 inches.
- Place a portion of sweet potato at the center of this disk.
- Bring the edges towards the center and seal them together.
- Cover the rolling board with a plastic sheet for easy rolling. Using rolling pin, start rolling the sweet potato-dough ball from step 7 sprinkling some flour over it as required.
- Place the rolled kangachi poli on a flat frying pan, let cook on one side. Flip it over and apply ghee. Let cook till golden brown on other side too and apply ghee.
- Repeat with all other portions.
