A very simple recipe for Mac and Cheese or Macaroni and Cheese. Macaroni is tossed in a creamy sauce and topped with cheese to make this simple dish. What more, you can also sneak in some veggies for your fussy eaters with this cheesy pasta:)
I had read in some article a few days ago that once the kids cross the toddler age, peer pressure and not parent pressure makes them try new foods. I realized that it is true when my preschooler came home the other day saying that she wants to try pasta. My husband and I are both fond of pasta and I have made pasta several times before. However, my daughter never showed any interest in it. Hence I was very surprised when she said she wanted to try pasta.
After probing further, I realized that she had seen mac and cheese in her friends tiffin box and now wanted me to make some for her so that she could taste and see if she liked it. The mommy me was excited as I always wanted her to like pasta like her parents. We made a plan for pasta dinner for the following night and I made this simple and yummy Mac and Cheese. I also sneaked in some veggies in an attempt to make it more wholesome. Though she did not really have a lot of it, she did try it and had a little which I was happy with…after all she had asked for pasta on her own 🙂
Here is the recipe of Mac and Cheese for you:
Serves: 1-2
Preparation Time:Â 5 minutes
Cooking Time:Â 15 minutes
Ingredients:
Macaroni: 1 cup
Cheddar Cheese: 1 cup shredded
Milk: 2 cups
All Purpose Flour: 3 tbsp
Butter: 2 tbsp
Sweet Corn : 1/2 cup
Mushrooms: 1/2 cup chopped into small pieces
Pepper Powder: 1-2 tsp
Salt: to taste
Method of Preparation:
- Take sufficient water in a pan. Add macaroni with salt and let cook till it is soft. Drain and keep aside.
- In a pan, heat the butter. Add all purpose flour and stir fry for 2-3 minutes.
- Add the milk and keep stirring on medium flame till it mixes well.
- Add sweet corn, mushrooms, salt and pepper. Close lid and let cook till the corn and mushroom is cooked and the sauce becomes creamy.
- Add cheese and mix well.
- Add the macaroni and mix well. Cook for a further 1-2 minutes.
- Serve hot garnished with shredded cheese.
