Mexican rice is an easy lunch or dinner option which is easy to make and gets ready quite quickly. It is also delicious with the combination of beans, cheese, red bell pepper and jalapenos with rice giving it the perfect taste!
I make this rice quite often as it is such a hit in my house. I use the ready made salsa (Tostito brand), but I am sure you can use any good salsa with the same result. I also added prawns to the recipe as we all love prawns, but it is completely optional if you want to make it vegetarian.

Serves: 4-5
Preparation Time: 15 mins
Cooking Time: 30 mins
Ingredients:
Brown Rice: 1 cup uncooked
Olive Oil: 2 tbsp
Onion: 1 medium chopped
Corn: 1 cup cooked
Jalapenos: 3 tbsp chopped
Red Bell Pepper: 1 cored and chopped
Black Beans: 1 can (425 gm) drained
Salsa: 1 cup
Prawns: 1 cup cut into small pieces (optional)
Salt: 1 tsp
Oregano: 1 tsp
Chili Powder: 1 tsp
Cheddar Cheese: 1/2 cup
Parmesan Cheese: 1/2 cup
Method of Preparation:
- Wash the rice and cook it in sufficient water till cooked. Drain the water and keep the rice aside.
- In a big pan, heat the olive oil.
- Add onion and saute till translucent.
- Add salt, oregano and chili powder and mix well.
- Add the bell pepper, jalepenos and prawns and saute. Let cook for 3-4 minutes till prawns are cooked.
- Add beans, corn, salsa and cooked rice. Stir fry till combined.
- Add the cheese and mix well. Your delicious Mexican rice is ready to serve!
Note: You can skip the chili powder all together if you are using hot salsa.
