Often people consider salads as boring food. However, I believe that with a good dressing, salads can be made very tasty. A few months back, my hubby and I decided to have a light dinner of salads and soups twice a week. Since then, I started experimenting with different types of salads. Some of my favorite salads as of today are Russian Salad, Avocado Tomato Salad, Beetroot and Sweet potato salad and Spicy Potato Salad.
Mixed veggies in Vinaigrette dressing was among the first salads that I tried and loved. In fact it figures in our menu almost every second week.
The dressing that I have used here is called Vinaigrette Dressing. Vinaigrette Dressing in its simplest form consists of a combination of Vinegar and Oil. In this recipe, we add to it fresh cream, mustard powder, pepper and salt to get a great dressing which is then combined with the mixed vegetables.

Ingredients:
Mushrooms: 1 cup quartered
Broccoli florets : 1 cup
Capsicum: 1 cup (cut into small pieces)
Lettuce: 1 cup (torn into pieces)
White Onion: 1 cup chopped
Baby Corn: 1 cup (cut into small pieces)
For the dressing:
Vinegar: 2 tbsp
Olive Oil: 2 tbsp
Fresh Cream: 4 tbsp
Mustard Powder: 1 tbsp
Sugar: 1 tsp
Pepper Powder: 1-2 tsp
Salt: to taste
Method of Preparation:
- Parboil the mushrooms, broccoli, white onion and baby corn.
- Mix all the vegetables together.
- Mix all the ingredients for the dressing together.
- Mix together all the vegetables and dressing and serve.
