I am sure for most mommies, the tough job is to prevent their kids from eating junk. For me, that is the case with dear hubby. My baby is still very small, and I can govern what I give her to eat. But my husband binges on quite some biscuits and chips and when I see him eating those, I almost have that ad jingle going in my head (biscuit ke naam pe maida kha rahe ho :(). To avoid that, I always try to stack up some healthy snacks (Wheat Chocolate Chip Cookies, Puffed Rice Snack, Healthy Whole Wheat Flour Cookies). Fills me with a sense of relief seeing him eat these home-made healthier versions of the cookies.
Both of us love the oatmeal cookie from Subway and it had been on my to-do list for long. After one unsuccessful attempt I came up with this success recipe. The cherry on the cake (or shall i say the raisin on the cookie) my little toddler and in-laws loved them too 🙂
Makes : 18-20 cookies
Preparation Time : 10 minutes
Cooking time : 8 minutes
Ingredients:
Sugar : 1/4th cup
Brown sugar: 2 tbsp
Butter : 1/3rd cup (softened)
Baking soda : 1/3 tsp
Cinnamon : 1 pinch
Salt : a pinch
Vanilla Essence : 3-4 drops
Eggs : 1
Oats : 1 cup
Wheat flour : 1/2 cup
Raisins : 2 tbsp
Almonds : 5-6 chopped (optional)
Method of Preparation
- Add sugars, butter, baking soda, cinnamon, salt and vanilla in a large bowl and mix.
- Add egg and beat well. You can transfer the contents to a mixer unit and whisk it.
- Add oats, wheat flour and raisins (and almonds – if using) and mix. The batter would be quite dry, almost like a dough.
- You can either spoon the batter or flatten with your palm. I stuck one raisin the center of each cookie.:)
- Bake in a preheated oven (180 deg Celsius) for 7-8 min, till the cookies appear slightly brown on top. Remove from oven and cool on wire rack. On removing from oven the cookies will feel soft, but don’t worry, they will harden later.
Store in an air-tight container
