Palak Sandwich is a very healthy sandwich recipe which uses a filling of spinach (palak) and potatoes. It is very easy to make and uses simple ingredients.
When fresh spinach is abundant (grows in my garden), sometimes we have a very big harvest of a lot of spinach at once. That’s when I need to come up with new recipes so that my family does not get bored of eating the same palak dishes over and over again. I often make palak paneer, palak paratha, dal palak…these are regulars in my house. But this time I thought of making these sandwiches which my mother used to make very often when we were kids. Palak sandwich was such a hit in my house back then! And it was a hit with my husband and kids too now when we made it !
Here is the step by step recipe for palak sandwich with pictures:
Makes: 7-8 sandwiches
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Ingredients:
Spinach (Palak): 200 gm
Mint Leaves: a handful
Garlic: 4 cloves
Potatoes : 2 medium boiled and peeled
Green Chilies: 2 small
Tamarind : 1 tsp
Salt: to taste
Bread Slices: Around 16 slices
Butter: As required
Method of Preparation:
- Heat sufficient water in a big pan and once the water starts boiling, put off the flame and add the palak to it. Keep it in this hot water for some time and then remove them from the water.
- Roughly cut the boiled potatoes.
- Grind together the palak, green chilies, garlic, tamarind and salt. Once it forms into a paste, add the chopped potato pieces to it and pulse it briefly such that the potato gets mashed but doesn’t completely get paste like.
- Apply butter on one side of each bread slice.
- Take one of the bread slices, and put 2 tbsp of palak mixture on the side which does not have butter.
- Cover with non buttered side of other bread slice.
- Make sandwiches in a sandwich toaster. Serve with tomato ketchup.
