Pav Bhaji is a very popular snack among people of all generations. And of course, a great way to feed veggies to fussy eaters. Here is a simple and easy to make Pav Bhaji recipe.
Usually kids do not like vegetables and it is required to find out new and innovative ways of feeding veggies to kids. Then come recipes like Pav bhaji as a savior. This Pav Bhaji recipe uses a mix of several different veggies like cauliflower, potato, carrot, capsicum and green peas. My hubby and toddler both love it, so I end up making it quite often.

For now, here is the step by step Pav Bhaji recipe with pictures:
Serves: 3-4
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
Onions: 2 big finely chopped
Tomatoes: 2 big finely chopped
Capsicum: ½ finely chopped
Carrot: 2 small
Cauliflower: 1 small
Green peas: 1 cup
Garlic: 4-5 cloves finely chopped
Potatoes: 2 big
Coriander: 1/4 cup finely chopped
Turmeric Powder: 1 tsp
Chilli Powder: 2 tsp
Everest Pav Bhaji Masala: 2-3 tsp
Salt: to taste
Method of Preparation:
- Cut the potatoes, carrots and cauliflower into big pieces. Boil them till completely soft. Boil the green peas separately.
- Heat a little oil in a pan and sauté the onion and garlic till translucent.
- Add the tomatoes and sauté for 2-3 minutes.
- Add turmeric powder, chilli powder, pav bhaji masala and salt. Close lid and cook for 2-3 minutes.
- Grind half of the onion-tomato mixture to paste. Add it to the rest of the onion-tomato mixture and mix well.
- Mash the boiled veggies and add to onion-tomato mixture. Add around 1/4 cup of water. Cook with closed lid for 3-4 minutes on low flame.
- Add coriander and capsicum and cook for 2-3 minutes. Serve with onion and lemon wedges.
Apart from the pav bhaji recipe, some other good recipes to feed veggies to kids are Mixed veggies cutlets, mixed veggies tonak, carrot paratha, methi paratha. None of these recipes have a very strong taste of the vegetable and hence kids who do not generally like vegetables enjoy these recipes.
