Payasam or Rice Kheer is an Indian sweet which serves as a delicious dessert. In Goa, Rice kheer is called as Payas and is usually made on festive or auspicious occasions.
Payasam is very easy to make and requires very few ingredients. It can also be made with left over rice. I have used sweetened condensed milk in this recipe. However, you can also use milk and sugar instead of using sweetened condensed milk. Add some dry fruits and saffron to the kheer and it will turn even more flavorful.

Serves: 4
Preparation Time : 10 minutes
Cooking Time : 45 minutes
Ingredients:
Basmati Rice: 1/2 cup
Sweetened Condensed Milk: 1 tin (400 gm)
Water: 500 ml
Cardamom Powder: 1 tsp
Raisins: As per taste (Optional)
Almonds (sliced): As per taste (Optional)
Cashew Nuts (cut into small pieces): As per taste (Optional)
Saffron: A few strands
Method of Preparation:
- Put the saffron in 2-3 tbsp warm milk and keep aside.
- Soak Basmati Rice in sufficient water for 1/2 hour.
- Boil sufficient water. Add rice to it and let cook till done. Drain the excess water and keep cooked rice aside.
- In a thick deep bottomed pan, boil together the 500 ml water, sweetened condensed milk and rice on low heat till it thickens and gets reduced by half.
- Add cardamom powder, raisins, almonds, cashew nuts and saffron to the kheer and mix well.
- Serve hot or cold as per taste.
