Potato and Radish Leaves Sabzi is a simple sabzi made from potato and radish greens…very healthy and nutritious! It is very easy to make too.
It is that season again…the season that I love so much…Winter in Bahrain! The perfect weather for gardening. And the time of the year when I cook based on what is growing in my garden 🙂
I just harvested some lovely radishes yesterday from my garden and used them in prawns curry which I made. The greens were so fresh and tempting that I had to make this sabzi which I always like to make when I get fresh radish greens. It is so easy to make and tasty too!
Here is the step by step recipe for Potato and Radish Leaves Sabzi with pictures:
Serves: 3-4
Preparation Time: 15minutes
Cooking Time: 15 minutes
Ingredients:
Radish Leaves: 350 gm
Onion: 1 medium chopped
Potatoes: 2 medium boiled and cubed
Garlic: 4 cloves chopped
Cumin Seeds: 1 tsp
Turmeric Powder: 1 tsp
Chili Powder: 1 tsp
Cumin Powder: 1 tsp
Dry Red Chili: 1
Oil: 2-3 tbsp
Salt: to taste
Method of Preparation:
- Wash the radish leaves well and chop them.
- In a pan, heat 1 tbsp oil. Add the chopped leaves, sprinkle some salt and stir fry till the greens start to wilt.
- Close the pan and cover cooked on low flame until soft. Once cooked take them aside.
- In the same pan, heat 2 tbsp of oil. Add cumin seeds and dried red chili and saute for a minute.
- Add onion and garlic and saute till translucent.
- Add turmeric powder, chili powder, cumin powder and salt and mix well.
- Add the cubed potatoes and saute till the potatoes are covered with the spices.
- Add the cooked greens and mix well. Your delicious Potato and Radish greens sabzi is ready to eat.
