Potato Stuffed Tortilla is a delicious recipe which can serve as an amazing appetizer or even main course. A simple yogurt dressing and potato stuffing is all it takes to make this quick recipe.
A few days back, we had friends coming over for dinner and I wanted to make something new which I had not tried before. Just then, my eyes fell upon the packet of tortilla wraps which we had picked up from Lulu. I thought why not try stuffed tortillas, it was something I had wanted to make for a long time now.
I quickly made a potato stuffing and a yogurt based dressing both of which hardly take any time. Warm the tortilla wrap, apply the dressing, place the stuffing, roll it up and it is ready to serve. That Simple! I was quite pleased with the outcome and now this recipe has become a regular at our house.
Here is the step by step recipe for Potato Stuffed Tortilla with pictures:
Makes: 6 stuffed tortillas
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Ingredients:
Tortilla Wraps: 6
Onion: 1 small chopped
Ginger-garlic paste: 1 tsp
Boiled Potatoes: 2 cups (cut into very small pieces)
Red Chili Flakes: 1 tsp
Oregano: 1.5 tsp
Hung Yogurt: 3/4 cup
Pepper Powder: 1/2 tsp
Colored Capsicum: 1 finely chopped
Mint Leaves: 3-4 tbsp
Salt: to taste
Oil: 2 tsp
Method of Preparation:
- Heat oil in a pan and stir fry the onion till translucent. Add ginger garlic paste and stir fry briefly.
- Add the chili flakes and oregano and mix well.
- Add salt and potatoes and mix well. Let cook for a minute. Keep aside and let cool.
- In a separate bowl, whisk the yogurt briefly.
- Add pepper powder, 2 tbsp finely chopped mint leaves, salt and the colored capsicum and mix well.
- Divide the stuffing and yogurt mix into 6 portions each.
- Lightly brush the tortilla wrap with oil and warm it in a pan till both sides are light brown.
- Spread one portion of the yogurt dressing at the center of the wrap.
- Spread a portion of the potato stuffing on top of the dressing. Garnish with mint leaves
- Roll up the tortilla and serve hot. Repeat for all the other tortillas.
