Prawns Quesadillas – A tasty mix of prawns, beans, corn, colored bell pepper and spices along with melted cheese stuffed in crisped tortillas and served with sour cream.
A Quesadilla is a Mexican dish consisting of a two tortillas which are filled with cheese and sometimes also with beans, meat, spices in between them and cooked on a flat pan. In this recipe, I have used a combination of black beans, corn, colored capsicum and prawns. If you are a vegetarian, you can just leave out the prawns and follow the same recipe. I have tried it and it turns out awesome too!

Makes: 3 Quesadillas
Preparation Time: 20 mins
Cooking Time: 15 mins
Ingredients:
Colored Bell Pepper: 1 finely chopped
Onion: 1 large finely chopped
Sweet Corn: 3/4 cup boiled
Prawns: 1.5 cups cut into small pieces
Olive Oil: 2 tbsp
Black Beans: 1 cup cooked or canned
Garlic: 2 finely chopped
Cumin Powder: 1 tsp
Chili Powder: 1 tsp
Pepper Powder: 1/2 tsp
Salt: to taste
Cheddar Cheese:3 cups grated
Tortilla wraps: 6 medium
Method of Preparation:
- Heat the olive oil in a pan. Add onion and stir fry till translucent. Add garlic and stir fry for a minute.
- Add the prawns and stir fry for 2-3 minutes till prawns are cooked and white.
- Add capsicum, corn and beans and mix well.
- Add cumin powder, chili powder, salt and pepper and mix well. Let cook for 3-4 minutes till the capsicum becomes soft.
- Divide the mixture into three parts for medium sized tortilla.
- Heat a pan. On the pan, place a tortilla. Add a layer of cheese, then a layer of the mixture from step 5. Add another layer of cheese and place another tortilla on top. Once brown, flip over and let cook on other side too till both sides are golden brown.
- Repeat for other tortillas. Cut the Prawns Quesadillas into triangles for serving. I like to serve the prawns quesadillas with sour cream.
