Prawns Risotto is a creamy and flavorful risotto recipe which is delicious and comforting. It is easy to make and gets ready quite quickly.

Serves: 4-5
Ingredients:
Olive Oil: 3 tbsp
Arboria Rice: 2 cups
Shrimp Broth: 8-9 cups hot
Garlic cloves: 6 crushed
Prawns: 1 kg shelled and deveined
Onions: 2 chopped
Smoked paprika: 1 tsp
Italian Seasoning: 1 tsp
Pepper: 1/2 tsp
Parmesan Cheese: 1 cup grated
Salt: to taste
Fresh Herbs(Chives, Basil): A handful
Method of Preparation:
- Apply smoked paprika, Italian seasoning, pepper and salt to prawns.
- In a pan, heat 2 tbsp oil. Add all the prawns to the pan and stir fry till cooked. Keep them aside along with any liquid residue on the pan.
- Heat 1 tbsp oil in a pan. Add the garlic and onion and stir fry till translucent.
- Add the unwashed rice to the pan and stir fry and cook for a minute.
- Add 4 cups of broth to the rice and cook on medium flame mixing from time to time.
- As and when you feel the liquid has reduced and it needs more broth, you can add 1 cup at a time.
- Once all the liquid has been used, the rice should be cooked and creamy.
- Add the prawns to it and mix well. Cook for a minute.
- Put off the flame and stir in the parmesan cheese and fresh herbs. Mix well.
