Sundays are the days when breakfast needs to be special. Sundays are also the days when we all like to wake up a little late. So the sunday challenge for me (am sure this is a challenge faced by most of us) is to put together some special breakfast that is quick to make. What can be quicker than a cooking time of one minute? Don’t believe me? Well – try it out. It just takes a minute to make this quiche 🙂
Some other interesting quick breakfast options that I typically make are Tomato Cheese Muffins, Potato Fritata, Sesame Bread Fingers and Avocado Egg Sandwich.
Coming back to the Quiche – A Quiche is basically a savory, open-faced pastry crust with a filling of savory custard with cheese, meat, seafood, and/or vegetables. (credits- wikipedia.org).
Going by this definition, I think we need to rename this recipe as Quick ‘Crustless’ Quiche. However I felt a quick recipe also deserves a name that can be said quickly. 🙂 Anyways, Quick Quiche, Quick Crust-less Quiche or Just Quiche – whatever you may like to call it- this is a must try one! 🙂
Makes : 1 Quiche
Preparation Time: 5 minutes
Cooking Time: 1 minute
Ingredients:
Egg : 1
Milk : 2 tbsp
Bread Slice : 1/2 (cut into squares)
Mozzarella cheese : 1 tsp (grated)
Tomato : 1 tbsp (discard the seeds and cut into squares)
Unsalted Butter : 1/2 -3/4 tsp
Pepper Powder : a pinch
Oregano : 1/2 tsp
Salt : as per taste
Method of Preparation:
- Break egg in a small bowl. Add milk, softened butter, pepper powder salt and half of the oregano to it and mix well.
- Add grated mozzarella cheese to a microwave safe mug.
- Add the mixture of step one to the mug.
- Add tomato and bread slice pieces and sprinkle the remaining oregano.
- Microwave for one minute. You will know your quick quiche is ready when the mug contents are well set. If it still looks wobbly you can microwave for another 5 – 10 seconds. Once it looks set, cool for a minute and carefully run a spoon along the sides of the mug. Transfer to quiche to a serving plate or just dig into the mug. Lose yourself to the soft delicate texture of the quiche.
Other than the short cooking time, another beautiful aspect of this recipe is that it is among the few ones which are tough to go wrong. In case you tend to get the quiche out of the mug a little early and realize its still not fully cooked – don’t panic! Just put it back to the mug and microwave for 5-10 seconds more 🙂
