Quinoa Salad – a delicious and healthy salad which combines the goodness of quinoa with chickpeas, red bell pepper, avocado and cucumber.
Quinoa is higher in protein than any other grains and is a great source of fiber. It helps you feel full longer, so it may help in weight loss. Also, the fiber in quinoa can help with cholesterol and blood sugar levels, lowering risk of diabetes and heart diseases.Quinoa is also rich in antioxidants which can prevent damage to heart and other organs.
Here is the step by step recipe for Quinoa Salad:
Serves: 3-4
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
Quinoa: 1/2 cup uncooked, rinsed
Water: 1 cup
Cucumber: 1 small chopped
Avocado: 1 cut into small pieces
Colored bell pepper: 1 small chopped
Onion: 1 small chopped
Olive Oil: 1 tbsp
Lemon Juice: 3 tbsp
White Vinegar: 1/2 tbsp
Honey: 3 tbsp
Feta Cheese: 200 gm cut into small cubes
Salt: 1/4 tsp
Black pepper powder: 1/2 tsp
Chickpeas: 1 cup cooked
Method of Preparation:
- Combine the quinoa with water in a pan. Bring the mixture to a boil, then decrease heat and cook uncovered until the quinoa has absorbed all the water. Remove from heat, cover and let the quinoa rest for 5 minutes.
- In a bowl, combine together the olive oil, lemon juice, vinegar, salt, pepper and honey. Whisk until it blends well.
- In a large bowl, mix together the chickpeas, onion, bell pepper, avocado and cucumber.
- Once the quinoa cools, add it to the bowl (step 3). Also add the feta cheese.
- Add the dressing from step 2 and toss until it is thoroughly combined.
Note: You can add in more lemon juice or honey based on your liking.
