Ragda Pattice is a very popular snack and fast food in India. It consists of patties made of mashed potatoes and ragda which consists of a thick gravy made of white peas. Add to it onion, coriander, spicy mint chutney and sweet and tangy tamarind chutney, and you have a delicious snack ready for you. The potatoes give you carbohydrates, the white peas are rich in protein, the date tamarind chutney is rich in iron, can it be called a complete meal? I think yes. You can also make it healthier by stuffing some veggies in the patties, but in this recipe of ragda pattice I have made only plain potato patties.

Ingredients:
To make Ragda:
Dried White Peas: 1 and 1/2 cup
Garlic: 3 cloves finely chopped
Onion: 1 big finely chopped
Tomato: 1 medium finely chopped
Chili Powder: 1 and 1/2 tsp
Chat Masala: 1/2 tsp (optional)
Turmeric Powder: 1/2 tsp
Salt : to taste
To make Pattice:
Potatoes: 6 boiled and mashed
Corn flour: 2 tbsp
Bread Crumbs: 5-6 tbsp
Chat Masala: 2 tsp (optional)
Chili Powder: 2 tsp
Salt: to taste
Final Steps:
Onion: 1 finely chopped
Coriander: 1/4 cup finely chopped
Sev: As required
Tamarind chutney: As required
Mint Chutney: As required
Method of Preparation:
To make Ragda
- Soak the dried white peas in sufficient water overnight. Pressure cook for 3-4 whistles. (Till very soft)
- Heat a little oil in a pan and sauté the garlic and onion till translucent.
- Add tomato and sauté for 2-3 minutes. Add chili powder, chat masala, turmeric powder and salt. Mix well.
- Add the cooked white peas and mix well.
- Take around 1/4 of the white peas mixture and blend to smooth paste.
- Add this blended white peas paste to the white peas mixture and mix well.
- Add water as required to make a gravy. Close lid and bring to boil. Keep aside.
Note: If you are not going to eat it immediately, you may need to add a little more water and heat it up as the ragda tends to try up in some time.
To make Pattice
- Mix together the potatoes, bread crumbs, cornflour, 2 tsp chili powder, 2 tsp chat masala and salt to taste.
- Divide into 15-20 portions.
- Take each portion in your hand and flatten it out to around 3 inches diameter.
- Shallow fry the pattice till golden brown on both sides.
- Take two pattice in a shallow plate.
- Put 1 ladleful of ragda on top of it. The amount of ragda you add would depend on how you like it.
- Similarly put as much tamarind and mint chutney as suits your taste.
- Put onion, coriander and sev over it. Your delicious Ragda Pattice is ready to eat.
