Rawa Fried Brinjal is a very simple and delicious preparation of brinjal which can be served as a starter or also as an accompaniment with the main course.
A typical Goan meal usually consists of rice eaten with fish curry/kadi/uddamethi and accompanied by other Goan specialities like fried fish, kismoor, tonak, Prawns Sukhe, Dangar to name a few. Fried fish is a very important part of the Goan cuisine and on vegetarian days, we usually replace it with fried potato, brinjal, lady fingers or mushrooms. This recipe explains how to make fried brinjal. The recipe for other fried veggies is similar and I will post them soon.
