Roasted sweet potato salad is a delicious salad which combines the goodness of sweet potatoes with a lip-smacking dressing…the result? Well, it is simply awesome! I am sure you will not be able to resist this one.
I first tried making this delicious salad a couple of weeks back when I found myself with access of sweet potatoes in the house and since then I make it every other week. It is so easy to make and uses such simple ingredients!
Sweet potatoes are well known for the number of health benefits they provide. They are an excellent source of fibers, vitamins and minerals and also rich in an antioxidant called as beta-carotene, which converts to Vitamin A when consumed. Combine the numerous health benefits with the sweet taste of the sweet potato, what’s not to like about this yummy root vegetable?
Here is the step by step recipe for Roasted Sweet Potato Salad with pictures:
Serves: 2
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients:
Sweet Potato cut into cubes: 2.5 cups
Salt: to taste
Pepper: to taste
Olive Oil: 3/4 tbsp
Honey: 1 tbsp
Lemon Juice: 2 tbsp
Mustard Powder: 1/4 tsp
Walnuts: 1/2 cup broken into pieces
Feta Cheese: 60 gm cut into very small pieces
Method of Preparation:
- Preheat oven to 220 degrees Celsius.
- Mix the sweet potato cubes with olive oil, salt and pepper and toss well. Bake in oven for 20 minutes. Flip over and let bake for 10 more minutes.
- Combine together the honey, lemon and mustard and mix well to make the dressing.
- Dry roast the walnuts and keep them aside.
- Once the sweet potato is baked, add the dressing and mix gently.
- Add in the feta cheese and walnuts and mix gently.
- Your delicious Roasted Sweet Potato Salad is ready to serve.
