Rosatle Fov is a Goan Poha recipe in which poha is cooked in coconut milk and jaggery giving it a very unique delicious taste. It is commonly made on the occasion of Diwali.
Of all the varieties of Poha made for diwali (Dudhatle Fov – Poha Kheer, Batat Fov – Aloo Poha, Dhayatle Fov (Dahi Poha), Rosatle fov is my favorite.
Rosatle Fov is quite easy to make and I feel it tastes best when made with brown poha. However, it can also be made with the normal white poha if brown poha is not available. I usually get brown poha from Goa and stock it up specially for making Rosatle Fov:)

Serves: 4
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Ingredients:
Brown Poha: 2 cups
Scraped Coconut: 1 and 1/2 cup
Jaggery: 1 cup
Salt:A pinch
Method of Preparation:
- Wash the poha and drain all the water.
- Add sufficient water to cover the poha. Add jaggery and let cook till poha is soft.
- Grind the coconut and extract coconut milk. Add coconut milk to poha and bring to boil.
- Add salt and mix well.
