Rosti is a Swiss dish consisting of coarsely grated potatoes shaped into patties and fried.It is crispy and golden on the outside and soft and velvety on the inside. It can be eaten plain or is served with fried egg or grilled fish or meat.
During our trip to Switzerland last year, I had tasted this awesome dish- Rosti. It was served with Grilled Chicken and Salmon. Since then, I have been wanting to make it. Finally, over this long weekend, I gave it a try. Rosti turned out very good and I served it with fried egg.
Here is the step by step Rosti recipe with pictures:
Serves: 5 small rostis
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
Potatoes: 4 large
Onion: 1 medium
Salt: to taste
Pepper: to taste
Cheese: 1/2 cup (Optional)
Butter: 2-3 tbsp
Additional Butter and Olive Oil: For frying
Method of Preparation:
- Coarsely grate the potatoes using the julienne attachment on a mandolin. Add to it grated onion.
- Add salt and pepper to the potatoes and keep aside for 5 minutes.
- Squeeze out all the excess water from the potatoes. Add cheese and 3 tbsp butter to the potatoes and mix well.
- Heat a small pan. Add 1 tbsp of oil and 1 tbsp butter on it and let it heat.
- Drop handful of potatoes into the pan covering the bottom of the pan. Gently spread with a spatula and create a pattice of 1/4 inch thickness.
- Cook on medium heat till golden brown on one side. Flip over and let cook till golden brown on other side too.
- Serve the rosti hot. It can be eaten plain or with a side dish of fried egg, grilled chicken etc.
