Russian Salad is a delicious salad which combines the goodness of several mixed vegetables with a mayonnaise dressing. It can serve as an excellent accompaniment to any meal. It also tastes good to eat by itself.
Another excellent way in which I like to serve Russian salad is as a topping on Canapes. It can serve as an excellent appetizer for any party; you just need to prepare the Russian salad in advance and place it in the refrigerator. At the time of serving, just put a spoonful of the Russian salad on the canape and pass it around…sure to be a hit with your guests!

Serves: 2
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Ingredients:
Mixed Vegetables(French beans, Sweet Corn, Carrot, Green Peas): 1 and 1/2 cup (chopped into small cubes)
Potatoes : 1 cup (Chopped into small cubes)
Pineapple : 3/4 cup (chopped into small cubes)
Mayonnaise : 1 cup
Salt : to taste
Eggs: 2 (optional)
Pepper Powder: As required (optional)
Method of Preparation:
- Boil Carrots, French Beans, Sweet Corn, potatoes and Green Peas.
- Boil eggs and cut into small pieces.
- Add Mayonnaise to a large bowl. Add salt and pepper and beat till the mayonnaise is smooth.
- Add the boiled vegetables, eggs and pineapple to the mayonnaise and mix well.
- Your delicious Russian Salad is ready to serve!
Note: to make a veg version of the Russian Salad, you can just skip the eggs. It tastes equally good.
