Strawberry Phirni is a creamy sweet rice pudding with fresh strawberries.
A few days back, I suddenly found myself with an excess of both strawberries and milk in the fridge. I had made strawberry muffins and strawberry cake just a few days back. So this time I thought of trying Strawberry Phirni as it was the perfect dessert which uses both these ingredients – milk and strawberries. The preparation was quick and it turned out great. Give it a try!
Here is the step by step recipe for strawberry phirni with pictures:
Serves: 3-4
Preparation Time: 10 minutes
Cooking Time: 20-30 minutes
Ingredients:
Basmati Rice: 4 tbsp
Milk: 5 cups
Sugar: 3/4 cup
Fresh Strawberries: 12-15 finely chopped
Cardamom Powder: 1/2 tsp
Almonds (blanched): 5-6 (optional)
Pistachios (blanched): 8-10 (optional)
Method of Preparation:
- Place strawberries in a pan and add 3 tbsp sugar to it. Let it cook on low heat for 4-5 minutes.
- Soak rice in water for around 1/2 hour. Drain all the water and grind to powder.
- Mix the ground rice with 3 tbsp of milk till smooth.
- Boil milk in a deep non stick pan. Add ground rice paste to the milk .Let it cook on low heat, stirring continuously.
- Add cardamom powder , finely chopped almonds and pistachios and mix well.
- Cook till phirni thickens (Note that once the phirni cools down, it will become more thick)
- Add remaining sugar and mix well till it dissolves.
- Take aside for the heat and add the strawberry mixture and mix well.
- Garnish with almonds, pistachios and strawberries.
