Tambdi Bhaji or Lal Matachi Bhaji or Red Amaranth Sabzi is a very easy to make gravy made with Amaranth leaves and toor dal. It tastes good both with rotis and rice. The finely chopped garlic pieces enhances the flavor of this curry.
The preparation is very similar to the dal palak preparation which I had posted earlier.
Here is the step by step Tambdi Bhaji recipe with pictures:
Serves: 2-3
Preparation Time : 30 minutes
Cooking Time : 10 minutes
Ingredients:
Onion: 1 finely chopped
Garlic: 10 cloves finely chopped
Red Amaranth(Tambdi Bhaji): 5-6 cups chopped
Toor Dal: 1/4 cup
Scraped Coconut: 1/2 cup
Tamarind: 1 marble sized ball
Green Chilies: 2 big
Turmeric Powder: 1/2 tsp
Salt: to taste
Method of Preparation:
- Grind the coconut, green chilies and tamarind into a smooth paste.
- Pressure cook the dal, red amaranth and onion (5 whistles). The color of the red amaranth changed to green after cooking it 🙂
- Heat oil in a pan. Add garlic and stir fry till brown.
- Add ground paste and dal-amaranth mixture to the pan. Mix well.
- Add turmeric powder and salt along with little water. Close lid and bring to boil.
