Tender Coconut Pudding is a tasty dessert made of tender coconut water and its flesh.
Tender Coconut pudding is often served as dessert for functions in Goa. I always thought that making it was very difficult. However, last time when I visited my mom she made Tender Coconut pudding and I realized that it is quite a simple recipe to make.
Here is the step by step recipe for Tender Coconut Pudding with pictures:
Serves: 3-4
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Ingredients:
Tender Coconut Water: 1 cup
Tender Coconut Flesh: 1 cup
Milk: 2 cups
China Grass Strands: 1/2 cup
Sweetened Condensed Milk: 1/2 cup
Method of Preparation:
- Puree the tender coconut flesh in a blender and keep aside.
- Add the china grass strands to the tender coconut water and heat till it melts.
- Simultaneously mix together the milk and condensed milk and bring to boil. To this, add the coconut water.
- Remove and keep aside for 5 mins to cool.
- Add to it, the tender coconut puree and mix well.
- Pour into individual bowls and keep in fridge to set.
